A Day of Meal Prepping and an Epic Lunch at Urban Hot Pot

Some days, you just wake up feeling productive, and for me, that meant tackling a full morning of meal prepping. There’s nothing like starting the week with a fridge full of ready-to-go meals, but lets be honest spending hours in the kitchen can be exhausting. So, after a solid meal prep session, I treated myself to an amazing lunch with friends at Urban Hot Pot, and let me tell you, it was so worth it.

I kicked off my morning with coffee in one hand and my grocery list in the other. If you’ve ever tried meal prepping without a plan, you know it can turn into a chaotic mess. So, I made sure to map out my meals for the week lots of protein, veggies, and healthy carbs to keep things interesting.

Once I got home, it was game time. I like to keep meal prep simple but flavorful, so I roasted sweet potatoes, cooked up some rice, and prepped a mix of chicken and salmon. To keep things from getting boring, I divided my chicken into different marinades some with garlic herb seasoning, some with teriyaki sauce, and a batch with spicy Cajun rub.

A couple of hours later, my fridge was stacked with neatly packed meals, and I felt like I had my life somewhat together. But after all that work, I was starving and ready for something way more exciting than my prepped meals.

Cue Urban Hot Pot the perfect way to reward myself after a morning in the kitchen. If you haven’t been, imagine a bubbling pot of flavorful broth right in front of you, surrounded by fresh meats, seafood, veggies, and noodles that you cook to perfection. It’s interactive, fun, and, best of all, all-you-can-eat.

When we got there, we each picked our broths (I went with the original, because why not?), then started loading up on ingredients. There’s something so satisfying about dropping thinly sliced beef into the broth and watching it cook in seconds. We kept the orders coming shrimp, mushrooms, bok choy, rice cakes basically everything we could fit in the pot.

The best part? The experience. Hot pot is more than just a meal’s a fun, social way to eat. Between cooking, chatting, and dipping everything into the endless sauces they provide, we were there for hours. By the time we finished, I was ridiculously full, but it was 100% worth it.

After that feast, I wasn’t about to do anything too ambitious for the rest of the day. I headed home, took a well-deserved nap, and enjoyed the satisfaction of knowing my meal prep was already done.
